Risotto alla Barbera (Rice with barbera wine)
Ingredients:
300 grams of rice
1 onion
3 glasses of Barbera wine still
30 grams of butter
Oil
Stock
Sage-parmesan cheese-salt
Fry on low flame in the butter and oil the sage and the chopped onion.
Add the rice and toasted for a few minutes stirring and slowly add all the Barbera wine.
Salt to please and slowly add the stock and simmer for 20 minutes.
When the rice is cooked add the grated parmesan cheese and let sit for 5 minutes before serving.
