Risotto alla trota (Rice with trout- Italians recipes)
Ingredients:
300 grams of rice
1 large trout fish
3 anchovies fillets
1 glass of dry white wine
2 tablespoons of cream
1 onion
1 carrot
1 celery stalk
parsley – salt
Clean the trout and boil it for 30 minutes in 1?2 liter of water on low flame adding the wine, anchovies, and the vegetables washed and cleaned. Once cooked let it cool off and peel the skin, remove the bones and sieve it along with the vegetables, filter the soup and smash the trout. Add the rice, salt to please, and slowly simmer for 20 minutes until the rice is cooked. Add cream and finely chopped parsley let it sit 5 minutes and serve.
